Amman and Petra have many excellent hotels, quite few are 5 and 4 Stars. TripAdvidor lists nearly 88 hotels in Amman alone. You can book a room in Amman or Petra by directly contacting your preferred hotel or through a travel agent. In either case make sure you follow the hotel's or travel agent's reservation policy.
For convenience and to avoid unexpected shortage of rooms during the conference period, the conference organizing chair arranged with a travel agent to pre-book rooms in some 5 and 4 Stars hotels around the conference venue in Amman and in the Mövenpick Nabatean Castle Hotel in Petra. The provided rates are guaranteed only from June 15 - 30, 2011.
